blueberry morning

Two mornings this week, Tom shoveled while I stayed inside eating toast. This morning I made blueberry muffins. In the great division of labor, I’d rather bake than shovel. I feel guilty though, especially since it’s starting to snow again.
Blueberry Muffins
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup sugar
- 1/2 cup unsalted butter, melted and cooled
- 1/2 cup whole milk
- 2 large eggs
- 1 teaspoon vanilla
- 12 ounce package frozen blueberries
- 2 tablespoons turbinado sugar
Preheat oven to 375. Line muffins tins with paper liners. In a large bowl, whisk flour, baking powder, and salt. In a medium bowl, whisk together sugar, butter, milk, eggs, and vanilla. Add the flour mixture and stir to combine. Fold in the frozen blueberries. Divide among the muffin tins and sprinkle with turbinado sugar. Bake about 20-25 minutes. Cool in the pan for 5 minutes then transfer to a wire rack.
Serve them to your husband on a cold morning and feel less guilty than before.
The muffins are a visual and culinary feast!
Even better warmed up and smeared with butter!

To be fair, I’ve also shoveled a lot. Just not this year. The snow blower seems to be up to the job so far this year!
I have lots of guilt, so now my husband has weight issues.
Guilt is a great reason to bake AND eat. Once, at one of those meals after a funeral, I gained 3 pounds in just an hour.
Oh, the photo alone put pounds on my posterior!
I am sure Tom is praying for more snow and more guilt.

I submitted this photo to Foodgawker.com but it was turned down. The feedback said that it was “too tight.” Like my jeans, I guess.
That photo was fabulous! I loved how you could see individual grains of sugar on the verge of melting into the muffin. The sugar on top still had its identity, but was still so much a part of the muffin. Shame on foodgawkers!!!!!
Love it. In the scheme of things, it’s nice when the division of labor works out so well.
